Baked Mediterranean Meatballs

Baked Mediterranean meatballs are great to add to a main pasta dish or simple enough to serve as and appetizer. Begin by preheating your oven to 350 degrees…in a large bowl combine 2 pounds of ground beef, 1 medium sized onion (finely chopped), 1/2 cup of fresh parsley (chopped), 2 tablespoons of oregano, salt and pepper, 2 cups of bread crumbs (or in the alternative 2 slices of white bread softened in water (this is what holds the mixture together) along with 2 eggs, and 2 teaspoons of dried spearmint…using your hands, combine all the ingredients and mix well….spray baking sheet with non-stick cooks pray or I like to opt fr coconut cooking spray…and shape into meatballs approximately the size of a tablespoons…bake for approximately 30-35 minutes or until golden brown. Note: the meatballs may be served hot or cold and may be used in tomato sauce. This is a simple and easy recipe to enjoy! Makes approximately 30-40 meatballs.
