A perfect dinner to share with your love on Valentine’s Day
Seafood Casserole
1 lb. of shrimp
1 lb. of scallops
2-3 tablespoons of sour cream
3 cups of crushed Ritz crackers
3 sticks of unsalted butter, melted
1 can of Campbell’s cream of shrimp soup
3 tablespoons Sherry wine
½ cup of toasted sliced almonds
1. Cook scallops and add shrimp in salted water for 12-15 minutes. Drain.
2. Crush crackers and add melted butter and mix together.
3. Line bottom of greased casserole dish with ½ of mixture to form a crust.
4. Place scallops and shrimp on crushed cracker crumb mixture.
5. Sprinkle sherry wine over scallop and shrimp mixture.
6. Mix shrimp soup with sour cream and spread over casserole.
7. Cover casserole with the remaining Ritz cracker mixture.
8. Sprinkle ½ cup of toasted almond slices over the top of the casserole.
9. Bake at 350 degrees for 40 minutes.
Serves 10-12 people
Seafood is best complimented by your choice of any white wine. My favorite is Sauvignon Blanc as it leaves your mouth with a clean pallet to enjoy truly enjoy and savor your new bite. Bon Appetit!
